The menu is every bit as “undisciplined” as the waiters are disciplined. The stove-cooked barracks-style beans are now outnumbered by various choice morsels. In true hunting style: a campfire roast with fire-baked potatoes. Then there are Transylvanian dishes, such as the famous Brad and Sălaşu virsli (spicy goat meat sausages), as well as balmoş (a delicacy made of sheep cheese), green cheese and traditional meat, plum, onion or cabbage pies. And the local kitchen’s tour de force would not be complete without a drop of bilberry brandy or ţuica, which are now allowed on the premises.
